Recipes..MANGO BACON CHICKEN QUESADILLA yummy


INGREDIENTS:

1 large Chicken Breast
1 Teaspoon Chili Powder
1 Teaspoon Cumin
1 Ripe Mango, peeled and sliced
Mexican Cheese Blend
4-6 Slices of Bacon, cooked and chopped
Fresh Tortillas
Guacamole (we make ours with 1 avocado, half a tomato, a handful of cilantro, a couple dashes of garlic powder and a few squeezes of lime juice)
DIRECTIONS:
Mix the cumin and chili powder in a dish.
Place the chicken breast in the dish and turn to coat.
Place the chicken breast in a baking dish and spray the top of the chicken with canola oil nonstick spray to help keep the spices a little more moist.
 Place in an oven at 350 for 30 min.
Remove the chicken from the oven and let rest for 5-8 minutes.
Slice thin and set aside.
Cook two tortillas. Once you flip them over, quickly sprinkle with the cheese blend, chicken, bacon, mango and more cheese.
Top with the other tortilla and set a heavy pan on top to seal in the goodness.
Remove from heat and serve with fresh guac
