Recipes..Cream Cheese Cranberry Muffins cake
Soft muffins made with cream cheese and fresh cranberries. Perfect for breakfast, brunch for Christmas and the holidays.

INGREDIENTS
1/2 cup butter softened
1/2 package 4 ounces cream cheese, softened
3/4 cup sugar
2 large eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
3/4 teaspoons baking powder
1/4 teaspoon salt
1 cup fresh or frozen cranberries
INSTRUCTIONS
Preheat oven to 350�.
In a large bowl, cream butter, cream cheese and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla.
Combine flour, baking powder, and salt; stir into creamed mixture just until moistened. Fold in cranberries.
Fill greased or paper-lined muffin cups three-fourths full.
Bake 20-25 minutes or until a toothpick inserted in the muffins comes out clean. Cool 5 minutes. Remove to cooling rack to cool completely.
